Informazioni generali / general information

Obiettivi: The Italian agri - food system takes on daily new challenges in relation to: authentication and traceability of animal products by protecting animal biodiversity, eco - sustainability of the agro -food industry, safety of food and feed, evaluation of environmental impact and ecotoxicity of veterinary drugs. The course will provide a multidisciplinary overview of the latest developments within the themes mentioned with particular reference to the approaches and biotechnological applications.

This course, structured in three modules, will provide, in the first module an overview of the main Italian farm animal breeds and of the principal methods of analysis of genetic data in order to characterize them. Moreover, methods to identify useful markers for authentication and traceability of animal products will be presented. The second module will provide an overview of the environmental impact of the main agri-food chain and a critical assessment of its ecosustainability. The third module will also provide deep knowledge on veterinary toxicology, in particular residues of drugs used in farm animals and their ecotoxicity and impact on the environment.

Programma / Syllabus Module: Characterization of Italian animal genetic resources for food products: authentication and traceability purposes:

The course will address the history of animal genetic resources (domestication, main species and breeds) as recently depicted with the aid of molecular information. An overview of Italian breeds and products together with an overview of molecular tools useful for characterization and traceability of species, breeds and animals.
Topics:
The livestock domestication process. Ancestors, geographical origins and dispersal of domesticated animals (3 hrs).
The concept of breed and the process of their formation: pre-mendelian period, the animal husbandry pioneers, mendelian period, the modern tools (3 hrs)
Analysis of molecular data in animal population: genotypes and allele frequencies, observed and expected heterozygosity, genetic distances. Graphical representation of similarity and diversity of animal breeds and species (3 hrs)
Genetic structure of the Italian animal genetics resources. Molecular data for breed and product characterization. Traceability: methods and usefulness of traceability for species, breeds and animals identification (3 hrs)
The main Italian and cosmopolitan cattle breeds: (2 hrs): phenotypic description and genomic background
The main Italian and cosmopolitan goat and sheep breeds (2 hrs): phenotypic description genomic background
The main Italian and cosmopolitan pig breeds (2 hrs): phenotypic description genomic background
Phenotipic description and genomic knowledge related to other farm animal species (2 hrs).
Overview of animal products of Italian agro-food system (4 hrs)

Sustanability indicators and examples of calculation of the environmental sustainability.

Programma / Syllabus Module: Ecotoxicity and drugs residues in the food chain:

The course will provide deep knowledge on veterinary toxicology, in particular residues of drugs used in farm animals and their ecotoxicity and impact on the environment.
The topics covered will be:
Drugs residues and their classification (4 h)
Theory of environmental impact of drugs (2 h)
Studies for the evaluation of drugs environmental toxicity (2 h)
Guidelines for the evaluation of environmental impact of veterinary drugs (Ecotoxicity) (4 h).
